Served with ice on hot days or served warm on cooler evenings, this drink is a delicious treat that can also soothe sore throats! Its particularly good with our Heather Honey🍯, but any kind will still taste wonderful.😋
Ingredients:
-3 UNWAXED ORANGES
-5 SPRIGS OF ROSEMARY
-3 CLOVES
-700ML WATER
-ABOUT 375G GRANULATED SUGAR
-ABOUT 2 AND 1/2 TBSP Heather HONEY
- Prep:
- Use a vegetable peeler to pare the peel from the oranges in thin strips.
- Put the orange peel strips, rosemary, cloves, and water into a pan.
- Bring to a boil, then turn off the heat, cover, and let it cool and infuse for 24 hours.
- Sterilize Bottle:
- Wash the bottle and its cap thoroughly.
- Place them on a baking sheet in the oven and heat at 110°C for 10 minutes.
- Straining and Sweetening:
- Strain the infused liquid into a measuring jug.
- Squeeze the oranges and add the juice to the jug.
- Note the quantity of liquid and pour it back into the pan.
- For every 600ml of liquid, add 300g granulated sugar.
- Heat gently until the sugar dissolves, then bring to a boil and boil for 5 minutes.
- Adding Heather:
- Stir in the heather honey (2 tbsp per 600ml).
- Bottling and Storage:
- Pour the cordial into the warm sterilized bottle and cap it.
- Keep the bottle in a cool, dark place.
- Once opened, store the cordial in the fridge.
- Serving:
- Dilute the cordial to taste with still or fizzy water, or with tonic.
